Tatsuya Japanese restaurant is synonymous with sushi in Singapore. Located at the Goodwood Park hotel on Orchard road, this restaurant is owned by the renowned master chef Ronnie Chia. Open for lunch and dinner, Tatsuya is popular among Singaporeans and foreigners.

The decor of Tatsuya was very basic. In fact, it was typical of a traditional Japanese restaurant. The dining room was pretty small with just enough room for 14 diners. Though small, this restaurant boasts of a 23 seat sushi bar made from a 2,000 year old piece of pinewood. This sushi bar is said to be the longest in Singapore. Outdoor seating was available for another 16 - 20 people. But the sushi counter is the best place to sit since you have a full view of the chefs in action.

We were handed the menu promptly after we had settled in. Aburi Sushi is the house specialty. For a change, we decided to try the Chef’s selection, a tasting menu offering a wide variety of sushi and other Japanese fare for 230 (Singapore dollars) per person. Please note that the price varies depending on the cost of the fish as seafood is flown in thrice weekly from Tokyo's famous Tsukiji fish market.

The Chef’s selection or Omakase menu is a favorite among diners, but we decided to go ala carte and ordered variety of sushi and rolls. After my first bite of sashimi, I was beyond impressed. It was easily the best sushi I’ve tasted in Singapore - fresh, oh so fresh!

The rolls were also just as good, my only complaint was that there were just wasn’t a big selection to choose from. However, in a traditional Japanese restaurant like this, trendy rolls just don’t fit. With that in mind, we enjoyed the uber fresh sushi and sashimi at what had now become our favorite sushi restaurant in Singapore.

The servers at Tatsuya were dressed in traditional Japanese attire. Our server, Maggie was simply Bombastic. She was exceptionally well informed and guided us with the best things to order and had a spark that just made the whole evening even better.

Overall, Tatsuya serves excellent Japanese fare in a traditional Japanese setting. We specially recommend the Chef’s selection. Agreed, the prices are high, but imported seafood and meticulous sushi chef skills do come at a price. Reservations are a must here as this restaurant is a popular spot for sushi in Singapore. Our rating for Tatsuya is Bombastic.
